3 Healthy & Unique Guacamole Recipes
Chipotle Crab Guacamole. At Mexican super-restaurant Dos Caminos, they offer a Jumbo Lump Crab-Chipotle Guacamole, which got us thinking… Why not stir crabmeat into our classic guacamole too? Well, we tried it and it’s Dungeness-ly delicious! Just buy prepared crab meat at your local market or fish counter and gently stir it in a mashed mixture of ripe avocado, diced fresh tomato and white onion, a dash of lemon juice and salt and pepper to taste. Want to take it to the next level, Dos Caminos style? Add a dollop of chipotle mayonnaise too.
Shrimp & Lime Guacamole. We love shrimp and avocado salads so, we figured, why not turn this Italian summer staple into a delicious dip too? Mash ripe avocado and mix with diced purple onion. Squeeze in a few tablespoons of fresh lime juice and stir in diced, cooked shrimp. Serve with sturdy chips for a soon to be favorite!
Char Grilled Guacamole With Corn. Spark that grill and get cooking to make this warm take on your favorite guacamole. Take pre-cooked corn on the cob (this is a great way to use leftovers!) and halved, pitted avocados and place them on a pre-heated grill until slightly browned. Scoop the avocados into a bowl and cut the corn off the cob. Mix with diced onion and or garlic powder and salt to taste.
