Anti-Aging Mushroom + Leek Soup Recipe

Anti-Aging Mushroom + Leek Soup Recipe

1 Tbsp olive oil
3 Tbsp unsalted butter
1/2 onion, diced
2 leek, thinly sliced
2 garlic cloves, crushed
2 sprigs thyme
1/2 cup dry white wine
1/2 pound crimini or button mushrooms, sliced
1/2 pound oyster mushrooms, sliced
3.5 cups chicken or vegetable stock
1/3 cup cream (optional)
Salt and pepper, to taste
1 handful flat leaf parsley, finely chopped

Heat oil and butter in a large saucepan over medium heat. Add onion, leek, garlic and thyme. Cook and stir for 5-10 minutes, or until leeks are tender. Add mushrooms and stir to combine. Cook until tender. Add white wine and simmer until reduced by half before adding the chicken or vegetable stock and bringing the soup to the boil, uncovered. Again, reduce by half.  Blend soup (either transfer into blender or use a hand blender) and puree until smooth. Season with salt and pepper, stir in cream, if desired, and garnish with parsley.
