Avocado Recipes: Easy Avocado, Watercress & Cumin Salad

While some people fear the fat factor of avocados, the bottom line is that it’s an amazingly healthy fat and there’s nothing to fear about it! It’s rich in monounsaturated fats, which are easily burned for energy, it contains vitamins A, C and E and it has more than twice the potassium of a banana. We really can’t say anything bad about it. Plus, it’s creamy, delicious and filling – and it’s one of the 10 healthiest foods!

Sure, you can eat avocado rolls when out for sushi or mash avocado up as a healthy mayo alternative in your sandwhiches (one of The Beauty Bean’s favorite healthy eating tips!), but when you’re looking for a cooling summer salad, try making this healthy and tasty one. Avocado, Watercress, & Cumin Salad

2 tsp cumin seeds
3 large ripe avocados thinly sliced
1 bunch watercress, chopped
Lemon tahini dressing

Roast cumin seeds in a dry skillet. Remove and crush. Place watercress on a large plate, arrange avocado on top. Sprinkle with store-bought or homemade dressing and garnish with roasted cumin.
