Beauty Bite: Eggplant

Eggplant is a great source of fiber, essential for optimal intestinal movement, and potassium, a mineral and electrolyte integrally involved in managing and regulating your heartbeat and muscles contractions

Bottom line: a diet rich in eggplant will promote muscle tone and enhance metabolism.

Plus, eggplants are a fun and fabulous way to boost the heartiness (and fiber content) of meat-free meals.

For all of you concerned that eggplants are “nightshade vegetables,” which may cause minor inflammation, as with all other foods, eat eggplant in moderation and balance it with hearty greens to counteract the effect.

Pretty Prescription: Contrary to the belief that eggplant must be fried; baked eggplant can add heartiness to any salad, dip, or dressing. To prepare, remove purple skin with a vegetable peeler and cut into 1/4 inch medallions. Lay flat on a non-stick cookie sheet and bake until golden on top. Top with heated marinara sauce and fresh shaved sheep Manchego  or parmesan cheese; or simply toss with greens, artichoke hearts, avocado, and roasted red peppers for a richly satisfying dinner salad.
