You’ve heard it over and over again… Breakfast is the most important meal of the day! But, let’s be honest, even the breakfast enthusiasts among us get sick and tired of the usual breakfast foods. Cereal, eggs, yogurt. Blah, blah blah.

It’s time to mix up your usual healthy breakfast recipes with this easy, protein-packed and energy-loaded Baked Peanut Butter Oatmeal.

Now this is what we call a breakfast for champions!

Baked Peanut Butter Oatmeal Recipe

3 Cups Quick Cooking Oats
1/2 Cup Brown Sugar
1 Cup Milk (or a dairy-free alternative)
2 Tablespoons Butter, Melted
2 Eggs

2 Teaspoons Baking Powder
3/4 Teaspoon Salt
2 Teaspoons Vanilla
1/2 Cup Peanut Butter

This healthy oatmeal breakfast recipe is what we call a ‘combine and cook’ recipe because it only contains one step in the prep. Simply combine all of the ingredients and then cook! Make sure to stir the mixture well and then spread it in a greased 9×13 oven-safe pan. Next, bake it at 350 degrees for 25 minutes. The oatmeal is best served warm and you can add milk if desired. This recipe will definitely provide the extra punch you need to get you through a long day. Enjoy!
