No one wants to spend the first weekend of summer preparing complicated recipes. Rather, summer is all about easy and inexpensive food perfect for large gatherings, barbecues and the beach.
To help keep you out of the kitchen (and in your lounge chair), make this easy and inexpensive corn salsa from our friends at Economy Bites. It’s not only healthy, but takes just minutes to prepare and is guaranteed to go with anything else you or your host are preparing.
Corn and Bean Salsa
2 14 oz. cans of black beans
2 14 oz. cans of sweet corn
1 red onion, diced
1 package of cherry or grape tomatoes, sliced in half
½ Tbsp olive oil
1 bunch of cilantro
salt and pepper
Rinse both the corn and beans before pouring into a large serving bowl. Dice red onion and slice tomatoes in half before adding to bowl as well. Add sliced avocado, if desired. Drizzle with olive oil and squeeze the limes onto the salad. Add chopped cilantro to garnish and season with salt and pepper. Mix and serve with meat, fish or chips!
