Quinoa Salad Recipe: Fresh, Sweet, Crunchy + Perfect For Summer

Crunchy Summer Quinoa Salad Recipe
3 cups white quinoa
1 english cucumber, chopped
1/2 cup cherry or grape tomatoes, halved
1/4 cup radish slices
1 apple, diced
1/2 lemon, juiced
3 Tbsp Olive oil
2 Tbsp diced basil (fresh)
2 Tbsp diced mint (fresh)
Salt and pepper
Cook the quinoa according to the package instructions. When done, refrigerate to chill.
In a bowl toss the cucumber, tomatoes, radishes, and apple pieces with the lemon juice and olive oil, to coat. Add to the quinoa and mix. Gently toss in the basil and mint and season with salt and pepper to taste.
