As a dip for fresh vegetables and chips or as a spread on a sandwich instead of mayonnaise, guacamole has always been a go-to for those of us at The Beauty Bean. When we heard about this guacamole with a French-twist from Erica Palmcrantz and Irmela Lilja (authors of RAW FOOD: A Complete Guide for Every Meal of the Day), we knew we couldn’t resist. Not only is it loaded with heart-healthy fats and flavor but also it’s so easy even the non-chef can handle this one!
2 sundried tomatoes, cut into small pieces
1 teaspooon Dijon mustard
Put all the ingredients in the food processor and pulse until mixture is smooth. Add more mustard if you want a stronger taste. Serve immediately with chips, raw vegetables or spread on a sandwhich instead of mayonnaise.
