National Taco Day Recipe: Gluten-Free Breakfast Tacos Recipe
It’s National Taco Day (clearly a real holiday) so, naturally, I wanted to share you with you one of my favorite and easiest taco recipes: gluten-free breakfast tacos.

Gluten-Free Breakfast Tacos
2 Mi Rancho Organic + Gluten-Free Corn Tortillas
1 Tbsp Coconut Oil
2 Organic Pasture-Raised Eggs
1/2 Avocado, sliced
Salt + Pepper, to taste
Heat the corn tortillas (either on the stove top or in the microwave for 25 seconds).
While that’s heating, heat the coconut oil over medium-high heat and cook your eggs, as desired.
Place half of the eggs onto each tortilla and top each with half of the avocado.
Season as desired and serve immediately.
