Like the rest of America, I am currently having a love affair with avocados. Everyday, I try to figure out new and interesting ways to include the super food into my meals. Not only is the fruit (yes, I said fruit!) delicious, it is also packed with tons of nutrients.

Avocados are especially beneficial for you skin. Avocado oil, which is often added to many cosmetic products, has the ability to nourish skin. Their anti-inflammatory compounds help reduce skin’s redness and irritation. Also, avocados are very helpful in preventing aging symptoms.

Basil Avocado Pesto Pasta

1lb Linguine
1 Container Fresh Basil
1/2 Cup Pine Nuts
2 Avocados
2 Tbsp Lemon Juice
3 Garlic Cloves
1/2 Cup Olive Oil
Salt & Pepper

Now, this recipe is super easy. First, put a large pot of water on to stove and bring to a boil. Once boiling, add the linguine and cook for the specified number of minutes on the box. While the pasta cooks, you can make the pesto. In a food processor, combine the basil, pine nuts, avocados, lemon juice, garlic, and oil. Process until the mixture is smooth and season with salt and pepper. When the pasta is done, carefully drain and then toss it with the pesto sauce. Finally, enjoy!
