Decadent desserts don’t have to be reserved for “cheat-days” if you keep healthy, delicious cookies on hand that satisfy your sweet tooth and keep you on your healthy eating plan all at the same time. We especially love these Vegan + Gluten-Free Peanut Butter Oatmeal Cookies with Chocolate Chips not only because they please our taste buds but also because they fill us up with fiber and healthy fats to satisfy us faster and keep us full longer. We made these healthy cookies with a 7-year-old (consider my niece a Zagat-level critic of desserts) and even she loved them!
Vegan + Gluten-Free Peanut Butter Oatmeal Cookies with Chocolate Chips
1 ½ cup quick cooking gluten-free oats
3 ripe bananas
¼ cup pure maple syrup
1 cup crunchy peanut butter (no salt or sugar added)
½ tsp salt
½ cup vegan chocolate or cacao chips, optional
Preheat over to 350. Use a fork to mash bananas until they form a pudding-like consistency. Stir in all other ingredients slowly until combined. If your peanut butter is too hard to stir easily, microwave it in a microwave-safe container in 15-second intervals to soften. Bake on a greased baking sheet for 15 minutes or until the edges start to brown.
