When you’re on a budget, it can seem difficult to stay healthy. Nutritious foods often get thrown to the wayside in favor of cheap (read: fried and fast) junk. Here at The Beauty Bean, though, we believe that there is always a way to maintain a nutrient-rich diet and save money at the same time.
One quick and easy recipe we love for a healthy, affordable and delicious breakfast is this Latin-inspired, “Fiesta Scrambled Eggs” recipe, a dish that can be enjoyed as a protein-packed morning meal or served over brown rice for a punchy twist on fried rice!
We really love this healthy egg recipe, though, because of its versatility! Here, we used tomatoes and avocado, but get creative and feel free to add as many vegetables as you desire! And, just between us (wink, wink) this is a particularly great recipe to cook when you’re refrigerator is borderline empty since most of us keep a few eggs and canned beans lying around, even if we haven’t been to the supermarket. Plus, it’s so convenient and fast – ten minutes max and you’re ready to dig in to a healthy, filling meal!
Fiesta Scrambled Eggs
½ can black beans (1 cup cooked black beans)
½ can corn (1 cup cooked corn)
10 cherry tomatoes, chopped
½ avocado, sliced thin
1 slice cheddar cheese
Non-stick cooking spray
1 pat butter
Salt and pepper to taste
If using canned beans and corn, pour both into a strainer, rinse with water and set aside. On a cutting board, chop the tomatoes and slice the avocado. Crack the four eggs into a bowl. Whisk the mixture until the yolks are completely combined with the whites.
Heat a skillet over medium heat. We sprayed the pan with non-stick cooking spray and then added a small pat of butter for flavor, but you can use oil if you prefer. Pour the egg mixture onto the pan and turn down the heat to medium-low. Let the eggs start to cook for a second before adding the corn, beans, tomatoes and avocado.
With a wooden spoon or spatula, scrape the eggs back and forth on the pan as you would regular scrambled eggs. Break the slice of cheese into small pieces and place it on top of the egg mixture. Let it start to melt. Continue stirring the eggs until they are cooked, as desired. Sprinkle salt and pepper to taste. For a zestier kick, season with a splash of hot sauce!
