Coming up with new healthy lunch ideas is always a challenge. Especially if you want something quick, easy, healthy, and cheap (because let’s be honest, with unlimited time, skills, and money I’d have healthy lunch ideas oozing out of my gluten-free pores). And even more so if you don’t want just another salad.

This all becomes increasingly more challenging if you’re looking for something gluten-free too.

I make this Jolly Green Giant Scramble – or some take on it – at least once a week. It’s healthy, filling, gluten-free, and energy-packed so you’ll be satisfied until dinner.

Served hot, it’s perfect for cold winter days when healthy lunch ideas that take you far from the salad bar are top of mind! But it’s also delicious at room temperature, so you can whip it up in the morning and bring it to work too.

Heres the recipe as pictured, but feel free to add (or subtract) any veggies you like for even more healthy lunch ideas!

Jolly Green Giant Scramble

1 tablespoon olive or hempseed oil
2 cups frozen broccoli
1/2 cup frozen peas
1/2 cup frozen kale
3 eggs, scrambled
1/2 avocado, sliced
salt + pepper, to taste

In a large pan over medium-high heat, sauté the frozen vegetables in the oil until hot. Add the eggs and scramble until cooked to your liking. (I like my eggs well done, but it’s up to you!) Transfer the scramble to a bowl and top with the avocado and season, as desired.
