Healthy, Gluten-Free & Easy Quinoa Salad Recipe
If it’s not quick and easy (and by that I mean REALLY quick and REALLY easy), well, I’m not making it. I don’t like lots of steps, I don’t like needing lots of ingredients and I don’t like a lot of clean up. But I do like healthy, gluten-free and delicious recipes that make me feel satisfyingly full and perfectly protein-packed, which is why I love this Quinoa + Raisin + Almond Salad Recipe.
I first “invented” it (I put invented in quotes because, let’s be honest here, this isn’t exactly rocket science) on the salad bar at Whole Foods when I was, well, not at all interested in a salad. I wanted something grounding, something with… wait for it… CHICKPEAS (which I’m pretty much obsessed with – have you had the chickpeas in the Shrimp, Ceci, Chilies at Mario Batali’s OTTO in NYC?! They’re life changing – and probably fried, but that’s one of those, “What I don’t know won’t hurt me” kinda things that I’m blissfully in denial over).
Anyway, back to the salad bar at Whole Foods… in my anti-salad mood I decided to start with quinoa for a protein-packed and gluten free seed base because it tastes like a grain and I was in a carb mode (but when am I not?!). Some chickpeas (which, while not Mario Batali –esque, we’re pretty damn tasty, as usual always), sliced almonds and raisins later and I was well on my way to quinoa salad perfection. A dash of olive oil and a touch a sea salt later and we had arrived.

Healthy Quinoa + Raisin + Almond Salad Recipe
½ cup True Roots Organic Sprouted Quinoa (sprouted is easier to digest)
1 small (lunch-box size) box of raisins
1 Tbsp slivered almonds
Himalayan Pink Salt
Prepare the organic sprouted quinoa according to the package directions. When finished, stir in nuts and raisins. Drizzle with olive oil and sprinkle with salt to taste. That’s it! Enjoy!
