Healthy Quinoa Salad Recipe

This might sounds like an exaggeration, but this is literally the most delicious quinoa salad I’ve ever had!

And not just because I made it ;)

It’s slightly sweet, super refreshing, and easy-as-pie to make!

This quinoa salad is also great served either chilled or at room temperature, making it ideal for summer BBQs, picnics, and parties where temperature control is a bit more challenging.

I made this quinoa salad for a brunch recently and it was a big hit! Hope you enjoy!

Refreshing Summer Quinoa Salad Recipe

6 cups quinoa (prepared according to package instructions)
2 cups brown rice (prepared according to package instructions)
1 cup Whole Foods Tangerine Vinaigrette Dressing*, divided
2 cups red grapes, halved
2 cups chopped kale
1 cup almond slices
salt + pepper, to taste
2 cups chopped fresh mint leaves, divided

Prepare the quinoa and brown rice according to the package instructions. Mix the quinoa and brown rice together and toss with 1/2 of the Whole Foods Tangerine Vinaigrette Dressing. Cover, and refrigerate until cool (or overnight).

Toss the quinoa and brown rice mixture with the grapes, kale, almonds, and the majority of mint (leaving some out to garnish). Add the remaining dressing, salt, and pepper and toss until well combined.

Garnish with the remaining mint and serve either chilled or at room temperature.

Or, if you’d like to prepare this ahead of time, prepare as above, leaving out the mint, and refrigerate until ready to serve. Add the mint prior to serving.

* If you aren’t able to find or buy Whole Foods’ Tangerine Vinaigrette Dressing, use 1/2 cup fresh tangerine juice + 3 Tbsp white balsamic vinegar.

ps. Refrigerate the leftovers and enjoy throughout the week. The mint may lose its vibrant hue, but it’s still DELICIOUS!
