This recipe and it is one of our absolute favorites. It is extremely simple and is great when you are cooking for a large party. Not only are sweet potatoes a great alternative to baked potatoes, they’re also a nutritious powerhouse high in Vitamins A and C and rich in antioxidants.

Healthy Recipe: Baked Sweet Potato & Leeks

1 sweet potato per person
¼ per person (but always round up! The more leeks the better!)
4-5 Tbsp olive oil
salt and pepper, to taste

First, peel the sweet potatoes. (But be careful – peelers are more dangerous than they look… don’t ask!) Next, chop the potatoes into 1-inch pieces and place into a 9″ x 13″ dish. Uncooked sweet potatoes are very hard, like a carrot, so be careful when cutting. Try using a large knife for more leverage.

Now, it’s time for the leeks. Leeks are a root vegetable that you can find in the vegetable section at the grocery store near the celery, lettuce, herbs and such. They basically look like an over-sized scallion. After washing the leeks thoroughly (they sometimes have a lot of sand and dirt inside the layers!), chop them into ¾ inch sections and scatter into the dish.

Preheat your oven to 375 degrees and drizzle the dish with olive oil before seasoning with salt and pepper to taste. Toss with your hands and bake the sweet potatoes and leeks for 60 – 75 minutes, tossing halfway through so it cooks evenly. You want the sweet potatoes and leeks to brown, so if your dish needs more time in the oven, don’t be afraid to cook it longer.
