Brown Rice Salad: Better Than Salad, Just As Healthy

If you tend to shy away from salads as a main course because you don’t think they’re filling or hearty enough, this brown rice salad is the salad to change your mind.

With warm brown rice and a heaping serving of fresh guacamole (store bought or homemade will do), this arugula salad recipe is healthy, filling and seriously satisfying.

Brown Rice Salad with Arugula & Guacamole Recipe

½ cup brown rice
2 cups arugula or kale
3 Tbsp guacamole
Olive oil
Salt, to taste
Grilled chicken, optional
Black beans, optional

Cook rice as indicated on the packaging. Toss arugula or kale with olive oil and salt. Top with cooked brown rice and a few tablespoons of guacamole. Top with grilled chicken or black beans, if desired. Serve your delicious brown rice salad immediately!
