Healthy Recipe: Raw & Vegan Hearty Chunky Chili

This traditional meat-based favorite has been adapted into a raw, vegan recipe perfect for anyone looking for a healthy (but hearty) lunch or dinner recipe. And, unlike other vegan chilis, this bean-less recipe (loaded with Portobello mushrooms) will ensure that even those of you sensitive to beans will be able to enjoy this recipe in no time!

Raw & Vegan Hearty Chunky Chili

1 Portobello mushroom, finely chopped
1/4 cup nama shoyu (raw soy sauce)
1/2 cup minced celery
1 clove garlic
1/2 cup chopped red onion
2 tbsp fresh oregano
1 cup almonds, soaked
1 tbsp dry oregano
1 cup chopped carrots
2 tsp chili powder
1 1/2 cups sundried tomatoes
1 tbsp cumin
2 cups water
1 tbsp apple cider vinegar
1 tbsp olive oil
1/4 tsp cayenne pepper
1 tbsp agave

Try this raw chocolate fudge too!

Place chopped mushrooms, celery, onions and bell pepper in a large bowl. Pulse almonds and carrots in food processor until you reach a chunky consistency and add to bowl. Blend remaining ingredients in high speed blender until smooth and mix all together until well combined. Store in the fridge. Set out to warm up to room temp before eating.
