Healthy Salad Recipe: Cabbage + Apple Winter Slaw

Slaw seems to be relegated to summer BBQs – but we’re about to change that.

This is one of my favorite quick and easy slaw recipes (mostly because it’s quick and easy!). Even better: unlike most salads that get soggy the next day, this cabbage slaw is great up to 2 days later! So, make a whole lot and enjoy it for a few days on its own or tossed with grilled chicken or salmon. (Or just eat it all in one sitting!)

Cabbage + Apple Winter Slaw

1/4 cup apple cider vinegar
3 Tablespoons raw honey
3 Tablespoons toasted sesame oil
1 Tablespoon sesame seeds
1/4 teaspoon black pepper
1 small head purple cabbage, chopped
1 braeburn apple, diced

In a small bowl whisk together the apple cider vinegar, raw honey and toasted sesame oil until well combined. Stir in the sesame seeds and pepper. In a large mixing bowl, toss the cabbage with the dressing. Cover and refrigerate for at least 1 hour. Toss with the chopped apple before serving.
