Healthy Salad Recipe: Simple Guacamole Salad

As the weather gets warmer, it is the best time to amp up the raw fruits and vegetables in your diet. This salad is the ideal spring creation for detoxing your body in a simple, yet tasty way.

With few ingredients, it can be made in seconds and is a hit with everyone from the raw foodie to the junk foodie.  People who swear they don’t like salad will love this salad.

Did you grow up believing that salad (or everything for that matter) had to be drenched in dressing, particularly Ranch, to be be edible? Well this is the salad for you. The Dill in the dressing gives it a ‘Ranch’ flavor that your taste buds will love.

Simple Guacamole Salad

3 cups romaine lettuce (or any other green you like, like massaged kale)
1 Tbsp chopped dill
1 Tbsp Raw Apple Cider Vinegar
Juice of half a lemon
Pinch of sea or garlic salt
Fresh ground pepper, to taste
1 small ripe avocado
Other chopped veggies, optional

Chop the romaine into bite-sized pieces. Add the dill and toss it all in a huge bowl. Add the apple cider vinegar and lemon juice. Add salt and pepper. Toss then slice your avocado and scoop it all into the bowl.

This is where your hands will get dirty! Mash the avocado with your hands and massage it into the salad, make sure it is all covered and there are no chunks of avocado not mashed. It should look like guacamole with salad in it.
