Healthy Salad Recipe: Sweet + Sour Maple Kimchee Coleslaw

If your next BBQ needs some healthy coleslaw, give this sweet and sour version a try. It’s gluten-free and vegan – and delicious too.

Plus, with its probiotic kimchee to help ease digestion, you can feel better about the rest of your BBQ indulgences!

Sweet + Sour Maple Kimchee Coleslaw

1/2 small purple cabbage, chopped
1/4 cup kimchee (or raw sauerkraut)
3 tablespoons maple syrup
1 avocado, sliced or cubed

Toss the cabbage, kimchee and maple syrup until well combined. Cover and refrigerate for at least 20 minutes to meld the flavors.  Add the avocado immediately prior to serving.

Enjoy on its own or on your favorite sandwich or burger!
