Healthy Shrimp Scampi Recipe… with a Twist!

With summer right around the corner, the temperatures are on the rise. All Iʼve been craving lately is healthy, refreshing and easy recipes, and this dish fits the bill perfectly.

What we like best about this recipe: it also allows for so much creativity. You can take the pasta and shrimp base and change, add or subtract just about anything. For example, instead of the traditional angel hair pasta, I chose fusilli for a fun twist, but any pasta will do. Donʼt like capers? Take them out and add zucchini! You get the idea.

Letʼs get to cooking, shall we?

Healthy Shrimp Scampi Recipe… with a Twist!

3 cloves Garlic
1 pound Shrimp
1 Red Bell Pepper
2 tbsp Olive Oil
1 tbsp Capers
Salt and Pepper, to taste
1 box Fusilli Pasta
Shaved Parmesan, to taste
Fresh Parsley, to garnish

Put a pot of water on the stove. While you wait for the water to boil, mince three cloves of fresh garlic, clean, rinse and pat dry your shrimp and thinly slice the red bell pepper. Next, in a frying pan, add 2 tablespoons of olive oil. Put the heat on medium and then add the minced garlic. After the garlic sautés for a minute or two, add in the shrimp, red peppers and capers. Season the mixture with salt and pepper.

When the water comes to a boil, add in your pasta and set the timer for the instructed amount. Now, for a little trick: about a minute before the timer goes off, take about 3/4 cup of the starch water from the pasta pan and add it to the frying pan. Simmer the liquid in the frying pan for another ten minutes.

When the timer goes off, drain and plate the pasta. Then, add the mixture from the frying pan on top. Garnish with shaved parmesan cheese and fresh parsley. Finally, enjoy!
