Whether you’re bed-bound with a winter cold or just trying to healthfully beat the winter chill, soup is always the way to go. Canned varieties, though, are often loaded with unnecessary sodium, sugars and fats and, well, homemade versions seem like nothing short of a full time job. This one-pot recipe, however, loaded with multiple servings of healthy vegetables, is not only delicious but also easy. Plus it’s my mom’s recipe (really!), which makes anything better in my book!
Homemade Vegetable Soup
2 large boxes of vegetable broth
1 28oz can of organic chunky tomato sauce
1 bag of frozen cauliflower and/or broccoli
½ bag of frozen peas and/or corn
1 bag of frozen green beans
1 bag of fresh or frozen baby carrots
1 onion, chopped
Other vegetables, as desired (try squash, zucchini, beans, celery, etc)
3 Tbsp Worcestershire Sauce
1 Tbsp olive oil
Tabasco, to taste
Salt and Pepper, to taste
Sauté onions in olive oil in a large pot before adding all remaining ingredients. Cover and cook for 1.5 hours or until all vegetables are tender. Add Tabasco, salt and pepper to taste. Enjoy!
