Try overnight oats!
This recipe is not only super-duper (as in ‘no cooking required’) easy, it’s also delicious, filling, and even gluten-free and vegan too.
Sounds almost too good to be true, huh? (Yeah, your tastebuds will think so too.)
Gluten-Free + Vegan Vanilla Cinnamon Overnight Oats
2 cups gluten free oats (not instant)
2.5 cups almond milk
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
Combine all ingredients in a large tupperware and cover. Refrigerate overnight. Stir in the morning and serve.
Your overnight oats will stay good in the refrigerator for 5 or more days so feel free to make a whole big batch to get you through the week!
To mix it up, add various toppings too. Some of our favorites: acai powder, bee pollen, hemp seeds, maple syrup, flax seeds, and fresh berries.
