Gluten Free + Dairy Free Paleo Banana Bread Recipe

Sometimes you’re craving something warm and cozy. Other times you just have a bunch of bananas going bad that you don’t want to waste. Either way, this paleo banana bread recipe is the perfect solution.

Packed with fiber and free from gluten and dairy, this paleo banana bread recipe is the perfect guilt-free solution for all you baked goods lovers out there! Plus, because I make ’em in jumbo muffin tins, they’re super easy to grab when you’re on the run!

Paleo Banana Bread Recipe

4 very ripe bananas, mashed with a fork (the riper the bananas, the sweeter the finished product)
4 tbsp raw coconut oil
2 tbsp raw honey
2 tbsp vanilla extract
6 eggs
2 cups almond flour
1 cup coconut flour
3 tsp baking soda
1 tsp sea salt
2 tsp cinnamon

Preheat oven to 350 degrees. Use additional coconut oil to pre-grease 6 jumbo muffin tins or place jumbo liners into the muffin pan.

In a large mixing bowl, use a hand blender to combine the bananas, coconut oil, honey, vanilla, and eggs until fluffy. Stir in the almond flour, coconut flour, baking soda, salt, and cinnamon until well combined.

Pour the mixture into the 6 jumbo muffin molds.

Bake for 30-35 minutes, or until the muffin tops are golden brown and a fork comes out clean. Let cool for 15 minutes before removing from the pan.

Serve with raw almond butter or jam!
