We recently discovered this delicious protein-packed quinoa vanilla pudding recipe (with passionfruit!) and couldn’t wait to share it with you!
It’s from healthy living superstar Lorna Jane Clarkson‘s new book, Inspired, which is designed to teach women and girls how to live an inspirational and active life – and to make delicious and healthy recipes like this one!
Protein-Packed Quinoa Vanilla Pudding Recipe
1 liter coconut milk
1 tsp vanilla bean paste
1/4 cup coconut sugar
pinch of salt
1 cup uncooked white quinoa
1/2 cup passionfruit pulp (6 passionfruits)
2 Tbsp coconut flakes
In a small saucepan, on medium heat, bring the coconut milk, sugar, salt, and vanilla to a simmer. Add the quinoa, reduce to low heat, and cook for about 30 minutes.
Once the quinoa is cooked and liquid sickened, remove from the heat and allow to cool slightly.
Layer the quinoa and most of the passionfruit pulp into bowls or jars. Sprinkling with the remaining fresh passionfruit and coconut flakes.
Serve immediately. Can be stored in the fridge and eaten cold.
