We first “met” Marina Yanay-Triner via Instagram where the health and nutrition coach and founder of Soul in the Raw, showcases her raw vegan journey.

As a result of a powerful healing story in her family, Marina discovered a deep connection with her own body and a passion for health and wellness. Now, (following her BodyMind Institute certification,) the healthy foodie is sharing her recipes with the world – including this raw vegan tabbouleh salad recipe with us!

“Being Middle-Eastern, I definitely get excited about any meal that includes dishes from back home,” says Marina. And, well, of Middle-Eastern descent or not, this raw vegan tabbouleh salad is delicious!

While traditional tabbouleh is made with bulgur wheat – and always hand chopped! -, Marina’s raw vegan version is all vegetable based and allows for a time-saving food processor.

“I am doing this dish with my own twists, therefore, I allow you to use a food processor to make it! It would save you a ton of time. If you do want to make something more authentic, however, you can take the time to chop, just like when making salsa. Kick off your shoes, have a glass of green juice, and enjoy yourself in the kitchen. Make it a meditation,” which, suddenly makes hand chopping seem less daunting and more divine!

Also setting this raw vegan tabbouleh recipe apart: goji berries, hemp seeds, and lemon essential oil. “These foods are medicinal, and provide incredible health benefits. You only need a very small amount to enjoy the life-giving properties that these contain,” Marina explains. Plus, they add a unique taste and texture.


Raw Vegan Tabbouleh Salad

1 huge bunch of cilantro, or 2 small bunches
½ sweet white onion or red onion
1 organic tomato
½ English cucumber
1 red pepper
1 green onion
½ small bunch mint leaves
6 heaping tablespoons of hempseeds
3 tablespoons goji berries
1 drop lemon essential oil (optional, but recommended)

Juice of 1 lemon
1 clove of garlic, minced
Sea salt, to taste

Finely chop all vegetables using a food processor or very sharp knife. To avoid over-processing, process each ingredient separately in your food processor.

Sprinkle hemp seeds, goji berries, and the lemon essential oil, if desired.

Whisk the dressing ingredients together and toss with the salad. You can allow it to marinate for an hour or so, if desired.
