Salmon With Fresh Peach & Mint Salsa
For The Fresh Peach & Mint Salsa
2 cups fresh peaches ¼ inch dice
¼ cup red onion ¼ inch dice
¼ cup red pepper ¼ inch dice
1 TBSP jalapeño finely minced
2 TBSP olive oil
2 TBSP honey
1 lime juiced and zest
2 TBSP finely minced mint
1 tsp finely minced chives
Mix all ingredients in mixing bowl and season to taste. Let sit 2 hours before serving. Note, this is also a great sauce or topping for grilled meats or chicken and even makes a great topping for tofu and basmati rice for all the vegans and vegetarians out there!
For The Salmon..
Olive oil to brush fish
4-6 oz center cut salmon filets (skin off, pin bones out, ask your grocery store fish monger to make sure bones are out)
Salt and pepper to taste
Heat grill to medium high. Let it heat up for 10 minutes with top closed. Sprinkle salmon with salt and pepper and lightly brush with olive oil (too much oil will cause flare ups and will char the salmon). Cook on each side for about 3-4 minutes or until desired internal temperature is reached. Let sit for five minutes and transfer to a platter and top with peach and mint salsa. Pairs well with steamed basmati rice and sautéed spinach.
