Savory Oatmeal Recipe With Chickpeas + Scallions

I’m much more of a salty girl than a sweet one. I can skip the desserts but give me a bag or tortilla chips and I’m a goner! That doesn’t, though, mean that I don’t like playing with typically sweet dishes (especially breakfast ones) and giving them a savory twist.

I whipped up this savory oatmeal recipe the other morning when I was craving something warm and hearty after yoga, wanted something with protein in it, and most definitely wanted something savory.

With a limited number of ingredients on hand (I just got back from a quick trip to Sacramento and hadn’t yet had the chance to make it to Whole Foods), this is what I cameΒ up with and LOVED it!

It was delicious and kept me full for hours!

Savory Oatmeal Recipe With Chickpeas

1 cup gluten-free oats
1/2 cup chickpeas
1 scallion, chopped
1 Tbsp olive oil
Salt + Pepper to taste

Cook the oats according to the package instructions. When done, top with the chickpeas and the scallion. Drizzle with olive oil and generously season with salt and pepper, to taste.

Top with an egg or avocado slices, if desired!

For even more flavor, you can make the oatmeal using vegetable stock or even miso broth instead of water.
