Simple, Healthy Side Dish Recipes: Roasted Brussels Sprouts

By Kate Aquillano

We all remember when we were little and we tried to pawn off our brussels sprouts to the dog under the table… I don’t know about you, but I always got caught red handed! Well with this simple side dish, you will see this once despised veggie in a different light and you will definitely want to keep them all to yourself!

Originating from the cabbage family, brussels sprouts contain a large amount of Vitamin A and C and folic acid. They are also a great protecter against colon cancer. And, if it could get any better, they are SO easy to make.

First, turn on the oven to 350 degrees. Next, cut the brown ends of the brussels sprouts and remove any loose outside leaves. Place all sprouts in a mixing bowl and add about 3 tablespoons of olive oil, just enough to coat all of the vegetables. Now, season generously with salt and pepper and then give it a good stir.

Spread the brussels sprouts out onto a baking sheet covered in foil. Bake the sprouts for about 45 minutes, just make sure to leave them in the oven until they are golden brown. Personally, I like mine a little toasty, but that’s totally up to you! Thats it. I told you, so simple. Finally, ENJOY!
