Healthy Snack Recipe: Spiced Pumpkin Seeds Recipe
Tis the season for pumpkin, well, EVERYTHING.
Which means, in our world, that it’s time to talk about healthified pumpkin snacks. Because, while there’s a time and a place for any and all indulgences, pumpkin spice lattes on the regular aren’t a great choice and, well, we still want to feel like we’re in on the seasonal trend.
Alas, meet our spiced pumpkin seeds. They’re both sweet and salt (to satisfy everyone!), perfectly crunchy, and delicious!
Plus, they’re packed with zinc and vitamin E, to help support healthy bodies and beautiful skin from the inside out too!
Spiced Pumpkin Seeds Recipe
2 Cups Pumpkin Seeds
2 tsp Cold-Pressed Coconut Oil
2 tsp Maple Syrup
1 tsp Cinnamon
1 tsp Cumin
1 tsp Chipotle Chile Powder
1/2 tsp Salt
Preheat the oven to 350 degrees F
Clean your pumpkin seeds and dry with paper towels. It’s okay if they’re still a bit moist.
If your coconut oil is solid, warm it by placing the jar in a bowl of warm water to melt.
In a large mixing bowl, combine the coconut oil, maple syrup, cinnamon, cumin, chile powder, and salt. Mix in the pumpkin seeds, stirring until well-coated.
Spread coated seeds in a single layer onto a baking sheet. Bake in the preheated oven, stirring occasionally, until lightly browned, about 40 minutes.
Let cool before enjoying!
