Sugar-Free + Vegan Vanilla Sweet Potatoes
1 large sweet potato or garnet yam, peeled and cubed
1 tbsp raw coconut oil
1 tbsp ground vanilla bean
1/2 tsp sea salt
1 tbsp chopped fresh chives
Ground black pepper, to taste
In a medium pot, boil sweet potato cubes until fork-tender. Drain and, using a fork, mash until smooth. Stir in coconut oil, vanilla bean, sea salt and chives. Top with chives to garnish and ground black pepper, to taste. Serve immediately.
