Sweet + Savory Sweet Potato Mash Recipe
1 large (or 2 small) sweet potatoes
1 Tbsp coconut oil
1/2 cup chickpeas, prepared according to package instructions
2 green onions, chopped
1/4 cup raisins
1/4 cup sliced almonds
Salt, to taste
Roughly chop the sweet potato and boil until soft but not falling apart. Drain before transferring to a large mixing bowl and coating with the coconut oil. You can mash the sweet potatoes to your desired consistency, or keep them cubed. Stir in the remaining ingredients and serve immediately.
If you want to prepare this ahead of time, leave out the onions and refrigerate. Warm on the stove top and add the green onions prior to serving.
