By Latham Thomas

Craving sweets? Take some time to make this heart-healthy treat for yourself or a special someone. With walnuts (a great source of Omega 3 fatty acids, Manganese, Copper) and nutrient-rich dark chocolate, this fabulous fudge will help reduce blood pressure, lower cholesterol and even induce a sense of relaxation. It’s sure to win over your loved ones’ hearts (and to protect them at the same time)!

Heart-Healthy Raw Coconut Fudge

6 1/4 cups walnuts
1 1/4 cups agave nectar
1 cup raw cacao powder
4 cups shredded coconut

In a food processor, finely grind the walnuts until they’re the consistency of peanut butter.

In a mixing bowl, thoroughly mix walnut-butter with agave, cacao powder, and coconut – you can mix by hand if you like!

Once the texture is perfectly even, firmly press the mixture into a shallow glass pan or plastic tray.

Freeze or refrigerate for about 1 hour before scoring and serving! (You can also wrap pieces in cellophane and ribbon for Valentine’s gifts.)

Note: If you can’t find raw cacao powder, gourmet Dutch processed cocoa powder works perfectly too.
