Vegetarian Appetizer Recipe: Asparagus Crostinis

Summers are all about being outside, taking in the sunshine and enjoying time with family and friends. Don’t waste precious minutes toiling around in the kitchen trying to figure out what to bring to your next party. Try these easy, delicious and healthy asparagus crostinis. These are so refreshing and light and are perfect for an appetizer or afternoon snack. All you need is a loaf of French bread, asparagus, fat-free ricotta cheese, salt, pepper and the secret ingredient, truffle oil.

First, cook the asparagus. Cut about 2-3 inches off of the stems and discard. Place the asparagus in a microwave-safe dish and add about 1/2 cup of water, just enough to fill the dish 1/2 inch from the bottom. Cover with plastic wrap and steam in the microwave for 5 minutes.

While that’s cooking, turn the broiler on. Cut the french bread diagonally into 1/2 inch slices. Spread olive oil on the bread and place them in the broiler until golden brown, about 5-7 minutes.

Be careful when taking the asparagus out of the microwave, it will be definitely be steaming. With pot holders on, drain the excess water out of the dish. Take a couple asparagus spears and cut thin slices out of the stems. You will need about two slices for each crostini.

Now, its time to put it all together. Place the golden brown crostinis onto a platter. Place a spoonful of fat-free ricotta cheese on the bread and then lay the asparagus slices on top. Finally, season with salt and pepper and drizzle with a free drops of truffle oil.
