What’s not to like about an inexpensive, tasty and healthy meal? We know it can be time consuming to try and think of something to make for dinner, get to the store and prepare it. But we promise this is a great go-to meal for when you don’t have a lot of time but still want to eat healthfully. It is full of fiber, colorful vegetables and lots of flavor! Even better, we bet you have most of the ingredients already in your kitchen (eliminating the need to even go to the grocery store)!

More grains you should add to your diet!

Veggie Rice Bowl

Brown Rice
1 Can of Black Beans
Tomatoes
Green Onions
Garlic Salt
Pepper
Cheese of Choice (We like Goat Cheese or Low-Fat Shredded Cheddar)
Optional: Chopped Yellow, Green, or Red Pepper; Mushrooms (sautéed lightly in 1 tsp of Olive Oil); Corn

A couscous recipe you’ll want to try!

Cook the rice according to the package. (Quick tip: Buy the boil-in-bag individual servings—they cook more quickly and, if you’re eating solo, it will make the perfect amount!).  While the rice is cooking, rinse the black beans in a strainer to remove excess juice and set aside. Chop tomatoes into ¼ in cubes and set aside in a bowl, repeat with any additional vegetables you have around if you’d like some more veggies in your bowl. When the rice has finished cooking, scoop rice into individual serving bowls.  Top with cheese of choice, black beans, tomatoes and any other vegetables. Then cut green onions to garnish your rice bowl before sprinkling with garlic salt and pepper, to taste.
