Juicy watermelon dripping down our faces (seed spitting, optional) may have marked childhood picnics, but just because we no longer care to ruin our shirts with watermelon juice doesn’t mean you have to give up this summertime staple. With a more sophisticated twist, this watermelon salad blends the juicy melon of our youths with slightly more grown up herbs for a sweet summer salad perfect for any warm-weather get-together.
As an added bonus, if you are pregnant during the summer months, the cooling watermelon will help to reduce swelling from fluid pooling in the lower limbs and extremities. Plus, watermelon is also great for the male reproductive system, so dad can enjoy the wonderful health benefits of this one as well.
Watermelon Diva Salad
1 5lb watermelon
1 red onion or vidalia onion
1/2 cup fresh chopped mint
1/2 cup fresh chopped parsley
1/2 cup fresh chopped cilantro
4 tbs fresh lime juice
salt and pepper

Begin by slicing the onion into thin strips and soaking the slices in cold water for at least an hour. Cut the watermelon into inch size chunks. In a large bowl, mix the watermelon, mint, cilantro, parsley, lime juice and onions (drained, with the water discarded). Gently mix before adding salt and pepper to taste.
