Winter Kale Salad with Cranberry + Shallots

Winter weather has us craving warm soups and hot entrées. And for good reason. It’s part of our evolutionary history that we begin to crave foods that are both seasonal and literally help to warm us.

Our summertime salad favorites? They’re just not cutting it.

Leafy greens, though, are one of the best ways to boost our immune systems and keep winter’s colds and flus far, far away, which is why we’ve upgraded our kale salad for winter. Served at any temperature, this kale salad is just what our winter diets have been craving!

Massaged Kale Salad with Cranberry + Shallots

Serves 4-6

1/2 shallot diced
1/2 bag cranberries
1/4 cup olive oi
2 tablespoons honey
2 tablespoons apple cider vinegar
1/8 teaspoon salt
1/4 teaspoon black pepper
12-14 cups chopped kale

Over low heat, warm the shallot, cranberries, and olive oil until the cranberries burst. Remove from heat and add the honey, apple cider vinegar, salt, and pepper, stirring until combined. While still hot (but cooled enough so as to not burn your hands!), massage over raw kale. Serve at any temperature.
