Vegan, Gluten-Free & Raw Chocolate Chip Cookie Dough

What woman doesn’t have memories of licking the bowl after making homemade cookies – before, of course, you knew better than to eat raw eggs?! Indulging on a decadent sweet treat, though, doesn’t have to be left for splurge days or even special occasions when you’re able to make your favorite chocolate chip cookie dough healthfully! We whipped up this raw, gluten-free and vegan chocolate chip cookie dough recipe in minutes in our Vitamix so a delicious dessert that will make any day feel like a cheat day!
Healthy Cookie Dough Recipe
2/3 Cup Almond Flour
1/3 Cup Oats
2 Tbsp Raw Honey
1 Tbsp Maple Syrup
1 Tsp Vanilla Extract
Raw Cacao Nibs
Chocolate Chips, optional
Coconut shreds, optional

Blend almond flour and oats before adding the honey, maple syrup and vanilla. Blend until it start to look dough-like. If you’re adding chocolate chips or raw cacao nibs, add and blend for a few seconds. Scoop out all the raw, vegan and gluten-free cookie dough and roll into small balls. Top with an oversized chocolate chip (or, to keep it fully raw, roll in raw coconut shreds instead).
