With the high prices of fruit in the winter, it can sometimes seem difficult to eat (or afford) the requisite servings we need each day. Apples, oranges and bananas are seemingly the only affordable options, but, if you’re anything like us, you’re already bored with them by this time of year. With a subtle twist, though, Bruce Tretter, of Gotta Eat, Can’t Cook, shows us how these winter fruits can suddenly seem fresh again, in under ten minutes!
Winter Fruit Salad
1 Ripe Banana
Dried Cranberries (optional)
Cut the apple and the orange (peeled) in ¼ inch pieces and place in bowl. (To make peeling the orange as easy as possible, cut the stem and bottom ends from the orange, make 5 to 6 cuts just deep enough to cut through the orange rind and peel off the skin.)
Peel and cut a banana into ¼ inch slices right into the bowl.
Add a handful of raisins and/or dried cranberries, if desired.
Served with yogurt or tossed with crumbled feta cheese, this winter fruit salad can just as easily be a new breakfast staple as it can be a lunchtime favorite.
The Beauty Bean Tip: add lemon or lime juice to keep fruit from turning brown before lunchtime.
